Keto Pizza: Quick 5 Minute Recipe [Psyllium Husk Crust]
I think I’m known as “The Psyllium Husk Guy” by now. I love the stuff - I find it fascinating what textures, flavors, and new creations I can make with it. It’s definitely changed my keto cooking, and this is no different. We use the absorptive power of psyllium husk to give us an extremely fast cooking pizza crust - and essentially an entire pizza in just about 5 minutes.
Nowadays keto and pizza can go hand in hand (just take a peek at this Pepperoni Pizza), but it’s usually a timely process and takes some preparation. Now, you can have your pizza and eat it too - in under 5 minutes!
Make sure that when you broil your pizza, you’re using an oven-safe pan. If you don’t have one, you can always transfer your pizza crust to a small cookie sheet to broil it on! My preference is to let the pizza fully cool afterward, otherwise you have a semi-soft crust that will bend when you pick it up.
Taste-wise, this is very close to the old microwavable pizza’s my mom used to buy when we were doing “diet” foods. I used to love them, and I always looked forward to having a microwavable pizza when I could. The crust is not super crisp and hard, but more bready and puffy. That said, it definitely holds up to grabbing a slice and eating it. Oh, and for those who think this will taste like eggs - it really doesn’t. The psyllium, bacon fat, and Italian seasoning really combat the eggy taste, and you don’t taste a hint of it at the end.

Pizza Crust:
2 large Eggs
2 tbsp. Parmesan Cheese
1 tbsp. Psyllium Husk Powder
1/2 tsp. Italian Seasoning
Salt to Taste
2 tsp. Frying Oil
Toppings:
1.5 oz. Mozzarella Cheese
3 tbsp. Rao’s Tomato Sauce
1 tbsp. Freshly Chopped Basil
Nutrition Summary: This makes a total of 1 5 Minute Keto Pizza. Each pizza comes out to be 459 Calories, 35g Fats, 3.5g Net Carbs, and 27g Protein.

    Nope. Too much work. Just use a low carb tortilla, fry it to crisp a little (or put in oven a bit), take it out, put your sauce and toppings on, place in oven to melt cheese, etc., enjoy. You,re welcome. 🤗

      Yeah, I saw the pancake as well with those bubbles coming up in the middle. I bet if you threw in another couple of tablespoons of swerve, confectioners or liquid Alulose, you could’ve made a really nice big pancake. They make some pretty convincing keto, maple syrup’s these days.

    Is a ketone level of 80 mg/dl okay on a keto diet if you have just fasted for 24 hours? I have been on a keto diet for 16 days, often do Omad and eat 20-30 grams of carbs.

      That sounds quite high to be honest. I would just make sure you keep an eye on it. Once you start approaching and surpassing the 95 mg/dl range, it can become a pointer of ketoacidosis, which is dangerous.

      @@RuledMe But shouldn't you have symptoms then? I felt very good after the test yesterday and I didn't even eat until a few hours after the test. So I had fasted for a little over 24 hours. I felt very good, was just a little hungry and had a slight headache probably because of the fasting.

      @@ForestFilter I don't understand what you mean. 106 mg/dl is where dangerous level of ketones start, you are pretty far from that. You would not get symptoms for something you do not have? I just recommend to keep an eye on it because 80 mg/dl is pretty high (above optimal ketosis) but it's also not ketoacidosis.

    Do you know if erythritol and sucralose would also be a 1:1 swap in your recipe?

      Sucralose is usually liquid form, so it definitely won't be 1:1 in liquid form. It's super concentrated so it would only need a fraction on the amount. If you are talking about granulated Splenda, that will be 98% maltodextrin, which spikes blood sugar. I don't recommend it for keto.

    All.of them looked delicious but I prefer more texture in my soups. My favorite is sinigang (Filipino sour soup). I use bone in pork, beef, fish, or seafood as the protein. I don't like chicken in it although I love it in other dishes. My preferred souring agent is a blend of tamarind powder, onion powder, garlic powder, tomato flakes, and salt; I grew up on a Mama Sita's tamarind soup base which has those ingredients plus citric acid, cane sugar, rice flour, tomato powder (will turn into a brick in texture which is why I use tomato flakes instead) and MSG. Other souring agents are lemon and lime. I like to add broccoli, cauliflower, spinach, other leafy greens, okra, eggplant, and tomatoes to mine. Everyone else uses one to three vegetables in their versions. I get more energy from vegetables which is why I add more. Lee doesn't like it, but our son Daniel loves it.

      You can add salt to your food, it certainly isn't poison - it's an essential nutrient. Over salting and overconsuming high sodium food can be bad, sure, but there's a definite distinction to be made.

    Almost every keto recipe must have some nut in it. Geez. I do not eat nuts and secondly a lot of pesticide is used in processing it for packaging.!

      Nuts are pretty good for structure when it comes to baking. Better to stick with savory recipes if you're looking for nut-free recipes. Plenty of dairy-based sweets, though, like yogurt bowls, cottage cheese ice cream, etc.

      I'm sure you could, but I don't have much experience with lupin flour. From what I understand, you can replace 1/3 of the almond flour with lupin flour and get a good texture out of it.

    Looks great & pretty easy. wonder if we could substitute the almond flour for a different flour. Not quite sure which one, just moving away from almonds and nuts in general, trying to reduce oxolates. Keto, Ketovore, Carnivore works for me, but I do find myself sensitive to the nuts. Anyone else?

      Thanks! Oxalates shouldn't really be a concern for you unless you either have kidney issues already (in which case keto might not be the best diet of choice) or you consume lots of nuts already. If you consume nuts occasionally, the health benefits of nuts far outweigh the affect oxalates would have. You can use sunflower seed flour in the same 1:1 ratio as almond flour in any recipe, but it will slightly change the taste (and can sometimes turn green when baked).

      I'm sure you could - at the end of the day an air fryer is just a convection oven. You could reduce the temp a little bit and cook for a bit less time since mini muffins will cook through quicker.

      @@RuledMe you ought to do a series on air fryer baking. I have been watching your channel for a long time and I love your work. I do miss your presence in them though. I live full-time in an RV and it does not come with an oven so I rely on an air fryer

      @@davidmblabla I have a few air fryer recipes, but basically any oven-based recipe can be converted to air fryer. It just comes down to reducing the temp by 25 degrees OR reducing cook time. If you're reducing the amount of food that goes in there (or the container size, like using muffins) you'd need to do both.

      @@janettaylor2158 That could be a good option too. I remember her flour uses almond flour as well, though. Last I looked, it contained a lot of oat fiber which in larger quantities gives me bloating so I never really tried much with it. Hopefully the commenter has better luck than me!

    I am confused though.. you have 1 lb of bone in and skin on thighs but then you have 1.5lbs of boneless/skinless thighs. You were removing the bones entirely... ???

      Yes, you de-bone the thighs because that's how they are sold (at least in the US). If you want skin-on thighs, they come with the bone in as well. You de-bone them and mix them with skinless thighs for the extra fat/flavor/collagen.

      Friendly FYI that there is a link in the description to a full written version of all the recipes. That would be much better and easier to interact with since it's formatted for text readers. A *video* is never going to be properly optimized for blind people.

    I've been on a 20g </day keto diet and I'm dying! I must confess my biggest weakness in desserts and if I don't find a way around this constant 'urge'... ugh, as a note I am very fit working out 5 days a week and already ate healthy. It is just that I believe all the carbs have caused my bloating at times and spike in blood sugar - energetic then crashing. Thanks!

      No real reason to limit yourself to 20g/day to be honest, especially if you're actively working out. You shouldn't see a difference going up to 30g/day or even 35g/day. While I don't recommend having desserts all the time, having a dessert every few days (or once a week) shouldn't make a huge impact on your overall success. The only negative is if your body just doesn't agree with the sweeteners (in which case there are usually alternative sweeteners to use instead).
